The food services industry in India has evolved over the past two decades. Evolution can be divided into three phases on the basis of industry’s maturity, strategic focus, operating models, investment needs and geographical focus.
Phase I (2001-2010): In this phase, the industry’s formats were categorized as casual dining restaurants, quick service restaurants, fine dining restaurants, cafes, etc. and they began to expand.
A lot of franchisee models came into existence. Partnerships and joint ventures were also being explored.
Most of expansion was restricted to metros and tier I cities.
